The Ancho chile is the dried version of a Poblano pepper. Ancho chiles are sweet and smoky with a mild to medium-hot heat level. Ancho’s are commonly used in authentic Mexican cooking and is a staple in tamales, enchilada sauce and chili. Ancho chiles can be used whole, in which case they are typically reconstituted by soaking them in water to soften them or ground into powder and then used in spice rubs.
